Why do you use Rodda’s Cornish clotted cream?

“Rodda’s is a historic, British brand – it’s part of our culture and it’s been a staple in my cooking andeating for my whole life. There couldn’t be any substitute!”

Why is Rodda’s Cornish clotted cream the perfect addition to a sweet treat over Christmas?

“The cool and creamy clotted cream works perfectly with some of the more spiced, citrus flavours that tend to dominate at Christmas, whether that’s the rich tang of a brandy-doused pud or a flaky and fruity piece of stollen.”

What is your favourite way to utilise clotted cream at Christmas?

“Honestly, it works beautifully with most sweet festive things, but I also like to add any leftover into mash on New Year’s to accompany beef wellington, or into a classic leftovers soup with potatoes, leeks, and whatever else I’ve got in the fridge.”

What are your top tips for serving Rodda’s Cornish clotted cream over the festive period?

“Simple is best, Rodda’s deserves to sing on its own, not mixed in with lots of other ingredients. You can complete a dish with a simple dollop.

I like mine fridge-fresh, served with a warm accompaniment like a freshly-baked scone or mince pie from the oven, as below. There’s something extra cosy about the contrast of warm with a cool scoop of cream.”

Do you have an ultimate Christmas dessert ‘hack’ using clotted cream?

“Mince pies are the perfect pairing for clotted cream, especially if you’ve made them yourself and they are full of citrusy fruit inside. The tang of the mincemeat just goes so beautifully with a smooth dollop of cream!”
