Start by boiling the new potatoes. If large, half or quarter and place in a pot of boiling water. Add a pinch of salt and boil for 15-20 minutes until just soft. Drain and set aside on a plate to cool.
Mix the rest of the ingredients until combined.
Once the potatoes are cool, add the mixture to the potatoes and fold through with a spoon, coating the potatoes thoroughly.
Serve as part of a delicious picnic or side dish to a BBQ.
