Strawberries and clotted cream shortbread dessert

Ingredients
- For the strawberry layer
- 200g strawberries hulled and chopped
- 2 tbsp strawberry jam
- 1/2 tsp Vanilla extract
- For the cream cheese layer
- 100g Cream cheese
- 100g Rodda's Cornish clotted cream
- 50g Icing Sugar
- 10 shortbread biscuits broken into pieces
Method
For the strawberry sauce:
- Place all the ingredients for the strawberry sauce in a bowl and mix with a fork, mashing some of the strawberries to create a thick sauce
For the cream cheese and clotted cream layer:
- Place the cream cheese, vanilla and clotted cream in a bowl and stir to combine
- Sieve over the icing sugar and stir again
To assemble:
- Place a tablespoon of the strawberry sauce in the bottom of each glass or glass bowl
- Add a layer of crumbled shortbread
- Top with a layer of the cream layer
- Repeat until to the top, finishing with a cream layer.
- Top with a few slices of strawberry, and a small crumble of shortbread.
